The more colorful your plate, the better. Our interpretation of this salad was a result of cleaning out our refrigerator at the end of the week, but it turned out to be a quick, tasty dinner. Sort of like a carb-free, de-constructed BLT + some other things. Anyway, summer is almost here, so it’s time for salads for dinner!
1/2 a head of Romaine or Redleaf Lettuce, chopped
12 cherry tomatoes, halved
a small block of feta cheese, crumbled
a handful of croutons
3 slices of bacon, cooked and crumbled
2 hard-boiled eggs, chopped
Freshly ground black pepper
- Divide the lettuce among two plates. Scatter the tomatoes, feta cheese, and croutons. Place the chopped hard-boiled eggs on the side, and sprinkle the crumbled bacon on top.
- Finish with some freshly ground black pepper and a drizzle of your favorite dressing. Caesar was delicious, but a red wine vinaigrette would be good too.
